An authentic Italian pasta recipe, the base to any great Italian sauce.
A special recipe, the classic pasta sauce. Looking for a delicious result, whilst maintaining authenticity.
The Recipe:
Ingredients
A handful of spaghetti
A handful of finely chopped parsley
5 tbsp of olive oil
4 large cloves of garlic
1 fresh red chili
1 lemon (optional)
4-5 Jumbo Shrimp
Salt and Pepper to taste
Method
In a large pot, bring ample amount of water to a boil and season well with salt. In a pan, add the olive oil. Finely chop up the garlic and top with a large pinch of salt. Crush the garlic finely with the knife. The salt helps to draw out the moisture from the garlic and release the flavour. Add into the pan with the olive oil.
Sweat off the garlic and chili in the olive oil on a really low flame. Add in the Shrimp and cook for 2 minutes on each side. After 4-5 minutes of cooking without browning, add the spaghetti into the pan with some of the pasta water.
Quickly move the pasta around in the oil so that the emulsification of water and oil make a creamy sauce. Top with finely chopped parsley and lemon juice. Serve!
