A delightful chocolate cake with a decadent molten chocolate center, everything you want in a dessert.
A gooey dessert, tempered chocolate, fresh berries and vanilla ice cream; the perfect combination of hot and cold.
The Recipe:
Ingredients
1/2 cup heavy cream
1 cup of chopped dark chocolate
3 eggs
1/2 cup brown sugar
1/4 cup castor sugar
3 tbsp flour
1/2 cup butter

Method
In a saucepan, bring the double cream up to a boil. Add half the dark chocolate to a large bowl. Pour the heated cream over the chocolate and let it sit for 2 minutes. Stir until the chocolate is melted and smooth. Chill in the fridge.
In a double boiler, melt together the rest of the chocolate with the butter. Add in a pinch salt and let it cool down. In a large bowl, whip up the eggs and sugar with an electric whisk till the mixture has tripled in volume. Fold in the chocolate mixture and flour.
Line ramekins with butter and sugar, fill 1/3rd way up. Place a tablespoon of the ganache in the middle and fill up. Place in a 190*C pre-heated oven and cook for 12-14 minutes. Serve hot with some ice cream.
