The Nashville
It's the most exciting take on fried chicken; crispy crunchy fried chicken glazed in a sweet hot sauce. There's probably not a better bite of fried chicken than the first bite of a Nashville fried chicken leg!
The slider
The slider was probably the favorite part of the meal of the people who had all this food. Delicious buttermilk fried chicken in a humble slider bun with a peri peri burger sauce, pickles, lettuce and cheese. Who says no to that?
THE RECIPE:
ingredients
For the Popcorn:
2 chicken breasts, cut into bite sized pieces
For the Slider:
2 chicken breasts
2 slider buns
Gherkins/pickles
Peri Peri Sauce
Lettuce
2 cheddar cheese slices
For the Nashville Chicken:
2 chicken legs (bone in)
3 tbsp butter
1 tbsp ghee
1 tbsp kashmiri red chilli
1/2 tbsp paprika
Juice of 1 lemon
1 tbsp honey
Salt and pepper to taste
For the batter:
4 cups of buttermilk
3 cups of flour
1/2 cup of cornflour
2 tbsp salt
3 tbsp pepper
4 tbsp chili powder
3 tbsp garlic powder
1 tbsp cumin powder
1 tbsp ground up thyme and oregano mix
METHOD
In a large tray, combine all the dry ingredients and add a few droplets of buttermilk to create ripples in the batter. Marinade all of the chicken in the buttermilk, salted, for 7-8 hours.
Dip the marinated chicken into the flour and move it side to side, then shake off the excess and fry till golden.
For the nashville glaze, combine the ingredients in a pan and shake the pan vigorously till the butter and honey gets incorporated, otherwise the sauce may split. Glaze the chicken in the sauce and remove.
For the slider, toast the buns and top with peri peri sauce, pickles, burger patty, cheese and serve!
